How to store ghee properly to maintain quality?

Ghee is a natural and organic product. Because of no chemicals added, it does not last forever. Presence of moisture can ruin the ghee earlier than its actual life. To make the ghee last longer and to maintain its aroma and taste, below are a few steps that one must follow.
- Use air tight containers, preferably of glass or steel to protect the ghee from air which causes oxidation and rancidity. Rancid ghee is when ghee starts to give a strong foul and sour smell, incase of cow ghee it will also lose its yellow color along with foul smell.
- Store the ghee away from direct sunlight and heat sources like the stove.
- Make sure the spoon you are using to scoop your ghee is completely clean and free from moisture. Presence of moisture and foreign substance will ruin the ghee early.
- If your ghee consumption is very less, then refrigerate the ghee to make it last longer. Although, refrigeration will solidify the ghee.
- If you have a large container of ghee, then scoop out a portion of ghee for the next 10-15 days or even a month so you don't have to open the main ghee container again and again. This will reduce air contact and increase ghee shelf life.
- If you are making ghee, then make sure you let it cool down completely before transferring to a clean and dry container for storage.
