How much milk is required to make 1kg of Bilona Ghee?

I'm sure you know how percentage works. Did you know that cow milk fat is 5-7.5% at average best? This means that 1kg or 1000gms of milk will have 50-75gms of fat.  This percentage can vary, depending on the season, cow's stage of lactation, genetics, diet composition and milking intervals.

What is ghee? 

Ghee is 99.8% fat and 0.2% moisture. Which means that to make 1kg ghee we will need 1000/50=20kg of milk atleast. This is considering that all the fat in the milk can be extracted. 

In bilona method, first milk is boiled and cooled to 45 degree celcius to make curd. This curd is then churned to extract butter. Here, we can expect a loss of 10% fat. Further uopon heating the butter and filtering, we can expect a loss of 2-3%. 

So to get 1 kg of bilona ghee we need 25kg of milk. 

Always remember a lot of hard work of the animals and the farmer goes into preparing 1kg of ghee for you. The process, the cost of raw material, transportation cost, jar cost, labor cost, storage cost, processing cost everything affects the price of your ghee. If petrol prices are going up then we all need to understand that any pure product price will be affected. If you don't care about the quality and only the price, then you can find a vendor who can adulterate the product to keep your price same. But because we don't do that, the price changes with season and with global crisis. Spending 20Rs more today will save 20000Rs on health tomorrow, the rest is your decision.
